Black-eyed peas have became a part of my cooking as everyone at home love this excellent protein rich beans. This is the first time, am preparing a rice dish with this ultimate beans. Trust me this beans are seriously versatile and you can dish many incredible dishes with this fantastic beans. If you have cooked black-eyed peas in your fridge, then trust me, today's rice dish will gets ready very quickly than you can imagine. A prefect lunch box friendly rice dish to pack in anyone's lunch box. Though i have added black-eyed peas, you can prepare this same rice with any sort of beans. Flavored simply with garam masala,pav bhaji powder, cumin and pepper powder, this incredible healthy rice is definitely an easy breezy dish. Since i used grated carrots and cubed capsicums,just saute the vegetables, black-eyed peas with spices before adding the rice, thats it your rice gets ready to enjoy with your favourite side dish.

Crustless Spinach & Potato Quiche

Quiche is one of rich pastry of French cuisine which can be served hot or cold. Most famous quiche in France is Quiche Lorraine prepared with savoury custard with bacon or lardon topped with emmantel cheese.Usually prepared as open faced pastry crust with a savory filling, quiche can be prepared even as crustless. Yes you heard it rite, you can make some fantastic crustless quiche with your favourite ingredients in it. If you go through my space, you can find varieties of quiche either with crust, or crustless and even eggless quiche. Quiche can be prepared quickly however its loaded with proteins as eggs plays an important role in preparing this ultimate French pastry. Since egg and spinach is added in my today's crustless quiche, needless to say how protein rich is this dish. No crust is needed for making this quiche, if you plan to bake this same quiche with a crust, bake  yours as an open faced pastry with crust.

Murgh Kalimirch/Black Pepper Chicken

Murgh Kali Mirch is also known as Kali Mirch Ka Murgh, which means Black pepper chicken. This chicken dish is one of the most popular and flavourful side dish which you can have with anything. Serve this fingerlicking goodness chicken curry with some flaky parathas or else as side to serve along with simple pulao or fried rice, you can enjoy this lipsmacking chicken without any guilt. Carrot & Spinach Black-eyed Peas Medhu Vada/Keerai Karamani Medhu Vadai

This is not the first time am making Vadai aka crispy deep fried snacks with black-eyed peas, i have already tried thisthis baked vadas and this crispy medhu vada. And my today's black-eyed peas is quite a different version from the usual ones. Adding grated carrots and chopped spinach to some grounded deskinned black-eyed peas,once deep fried makes this incredible crispy medhu vadais. Usually i dont deskin the black-eyed peas, but this time i couldnt resist to deskin them to make some crispy medhu vadas, trust me deskinning the black-eyed peas make some crispy fried dumplings. Deskinned black-eyed peas works prefect as much as like urad dal for making prefect crispy medhu vadais. Make your medhu vadais more delicious and healthy either by adding vegetables or greens in it.

Butter Beans Jeera Pulao/Butter Beans Cumin Pilaf

Jeera Pulao, is nothing but a flavourful, cumin flavoured rice. This rice dish is completely an easy breezy dish to prepare with simple cooking process. If you dont want to spend more time in your kitchen and you need absolutely something flavourful, then you should definitely make yourself some Jeera Pulao aka Cumin Pilaf/Rice. Though this rice dish is very simple to make, when served along with some exotic dal, fingerlicking paneer gravies, or else with lipsmacking non vegetarian curries, this rice tastes absolutely fabulous. Yes any sort of gravies or curries goes prefect as side dish to serve along with Jeera Pulao. Jeera Pulao is my all time favourite as this dish replace very well Briyanis or fried rice if you are planning something special for an occasion. I make this rice often and serve along with non vegetarian curries if its Sunday special cooking. But my today's Jeera pulao is a protein rich one. Protein Masala Upma/Masala Vegetable Upma with Black-eyed Peas

If you want to give a try to a nutritious twist to the usual upma, then you should definitely go through my today's post. Adding loads of vegetables and cooked black-eyed peas will definitely transform a simple upma to a nutritious protein rich upma. Upma, this savoury semolina breakfast dish is one of the popular South Indian dish which gets really very quick with simple cooking preparation. Usually prepared with chopped onions and spiced with slit opened green chillies, Upma is definitely a filling meal when served along with spicy coconut chutney. Kerala curries are definitely my favourite as they are very mild in spiciness and cooked usually with coconut milk. Eggs are very healthy and they are good source of high quality protein.People often think that protein is only found in the egg whites. But trust me the egg yolks are known to be have almost all the nutrients and fats in it. However, in addition to these nutrients, the yolk also contains up to about half of the protein content of the egg. A large egg contains about 7 grams of protein, and the 3 grams will be coming from the yolk and 4 grams from the white.Therefore, eating the entire egg, not just the white, is the way to get the most protein and nutrients. Do you know eating raw eggs will provide least amount of proteins. Many researches and studies says that cooking eggs helps the proteins to be more easy to digest and more accessible to the body. Cheesy Black Beans & Potato Quesadillas

Black beans have been my all time favourite since i started loving black beans based Mexican dishes. If i plan to make some Mexican foods at home i cant think more than soaking black beans to cook with. Black beans makes excellent dishes and many Mexican dishes have this beans. If i plan Quesadillas, how can i keep myself away from black beans, obviously my today's post is completely from Mexican cuisine. Potato and black beans combination, works awesome as filling for making some super satisfying quesadillas. Quesadillas have been adapted to many different styles. In many countries like United States, many restaurants serve them as appetiziers. However many variations do exists and now many vegetables like zucchini, spinach or else tofu is also added for filling. Even dessert quesadillas do exists with chocolate, caramel, butterscotch with different fruits in it.

Eggless Cheesy Tofu Bombs

Cheese Bombs are extremely delicious to resist if you love some gooey cheesy centre in your bread rolls. Actually cheese bombs are small dinner rolls stuffed with any sort of cheese however mozzarella cheese suits extremely prefect to make some super cheesy bombs. If you are baking this cheese bombs dont forget to bake huge batch else you will regret later. My today's cheese bombs are extremely healthy as i used silken tofu in my bread dough. If you are follower of my space, you might have noticed that i have already baked few breads with tofu as egg replacer. Silken tofu replaces eggs prefectly in anything, especially in bread and cakes. However eggless pudding or chocolate mousse can be prepared with silken tofu as well. Silken tofu is an excellent source of protein, obviously my today's cheesy tofu bombs are protein rich and calcium rich tiny treats which will definitely please your tastebuds.

Vegan & Gluten Free Quinoa Chickpeas Pilaf

Pilaf, this dish is usually prepared with rice which is cooked in seasoned broth. Depending upon the cuisine, a Pilaf may contains, meat, fish, vegetables, pasta and dried fruits. Pilaf is a common dish in Middle Eastern, Latin American, Balkan, Central and South Asian, East African and Caribbean cuisine. Pilaf is a staple and National food in many countries. Pilaf is a fantastic one pot meal when served along with some super rich side dish. Tofu Spinach Fritters/Tofu Palak Pakoras

Though am keeping myself away from deep frying, sometime the weather or else the craving for deep fries will definitely pull you to dish some fritters atleast once a while in a month.We, blogging marathoners are running a month of blogging with Protein rich dishes as theme, obviously you might have noticed that i have been posting some delicious protein rich recipes. Actually this interesting theme is pulling us to hunt for some healthy proteinaceous foods or else to come up with unique protein friendly foods. My today's recipe is completely an interesting snack food which i prepared with some extra firm tofu, along with chopped spinach, onions and sliced potatoes. When mixed with gramflour and rice flour, trust me you will get some dangerously addictive pakoras which suits prefect to munch with a cup of masala tea or coffee. Vegan Moroccan Chickpea Stew/Gluten Free Chickpea Stew

I have been cooking from Moroccan cuisine since a while coz of my neighbour friend. She is a Moroccan and her grandma makes traditional Moroccan foods with an ease. Obviously whenever i get some free time, i dont forget to visit my neighbour to learn some Moroccan dishes from my friend or else from her grandma. I have learned Couscous, a traditional Moroccan dish from her which is our family favourite since ever i tried at home. Most of the Moroccan dishes calls for easy cooking method and their cooking style involves spices like cumin,paprika, coriander etc. If your pantry have cumin, coriander, cinnamon like spices you can dish out some succulent Moroccan dishes easily. My today's recipe is a simple stew which you can serve very well along with cooked rice or else with cooked couscous grains. If you want to serve this stew in a healthy way, serve this delicious stew along with quinoa or bulgur. With simple ingredients and cooked chickpeas, this stew makes an excellent meal to serve either for lunch or dinner.

One pot meals are seriously a blessing when you dont have enough time to spend in your kitchen. I just love any sort of one pot meals and my space have numerous varieties of one pot meals which can be handy at anytime of the day. Moth beans aka Matki is one among the nutritious beans which is easily available in every Indian grocery stores. Moth beans are extremely rich in proteins if they are sprouted well. However my today's recipe calls for simply soaked moth beans. Am trying to add this tiny beans in our diet quite often,one of those trials is this Biriyani. If its comes to vegetarian briyani i'll usually go for mixed vegetables biryani, but this time for a change i prepared this wonderful looking green biriyani as i want to make something different from the usual ones. My blog child was sitting idle for the past two months coz of my long vacation. Though my personnal life kept me super busy, i missed my virtual child very much. After making a fabulous Butternut squash chocolate loaf like cake and a soft tofu bread, i couldnt stop myself to bake an another fantastic cake with potatoes. Eggless Cheese Stuffed Tofu Bread

Do you know i get tofu easily than Paneer, i have to travel atleast 30 minutes to get a pack of paneer. But just by going a walk i can grab a packet of tofu as am living in Chinatown. Obviously i do cook more often with tofu than paneer. Its been a while i baked a bread with silken tofu, yes tofu replaces eggs very well in bread or in cakes. Silken tofu gives a wonderful texture and softness to bread. Either your bread is yeasted or simple flatbread, do try to add some tofu, trust me your bread will be super soft than you can imagine. Whenever i feel like having soft flatbreads, i dont forget to add pureed tofu to my flatbread dough. One of the best way to sneak tofu is definitely adding them this way in most of our dishes just to feed picky eaters at home.

Aloo Bonda/Batata Vada aka Potato bonda is a simple and tasty evening snack to enjoy with a cup of tea or coffee. Usually prepared with a simple onion mashed potato filling, these bondas tastes super delicious when served along with coconut chutney,but my today's post is definitely a innovative dish. Yes mine is quite a different from the usual potato bonda. I have prepared this fried beauties with cooked vermicelli and sweet corn kernels along with mashed potatoes. Eggless Japanese Sesame Cookies

Japanese Sesame Cookies, if you are looking for something super crunchy, nutty then you should look at my today's dangerously addictive Sesame Cookies. These cookies are eggless but not vegan, as milk and butter are used for binding the flour and other ingredients. With simple ingredients, you can bake out this ultimate Japanese sesame cookies with less efforts. Loaded with both black and white sesame seeds, this cookies are damn flavourful with super nuttiness. I bookmarked this cookies while we were running Mega marathon from Ruchi's Space, while she got this cookies from Gayathri's space. This cookie dough calls for oil, but i couldnt stop myself to add some butter to oil to bake this cookies somehow buttery.

Pinca - Croatian Easter Sweet Bread

Pinca/Pinza, this sweet bread is baked in Croatia especially during Easter holidays. Traditionally baked with loads of eggs, this bread will be super rich, soft and beautifully flavoured bread, obviously which will definitely tickle your tastebuds. Though earlier lard is used in this bread, nowadays Pinca is made with a butter and flavored with either with citrus zest or with orange zest, along with candied or dried fruits with some rum or rose water. Obviously this bread is a must for Easter table as Pinca remained as centrepiece of most of the Croatian Easter breakfast table. Pinca is often taken to Easter mass for blessings which is later given as a symbol of good wishes.

Uyghur Nan Bread

My love for Chinese foods, always pull me to cook different dishes from this cuisine often at home. If you cross a bread from this Cuisine, how can you resist to keep yourself away from trying your hands with it. Yes i crossed this Uyghur Nan bread at Ritu's Annapurnaz while we were doing a month of blogging marathon with different International cuisines. When i landed to her space to read her post, i completely fell in love with bread as this bread was very easy to bake. Obviously i gathered all the ingredients and baked this cuties at home. This Uyghur Nan bread is quite popular bread easily available in Xinjiang, China. This Bread is baked usually as a big, flat or disc shaped bread with thick edges and thin middle. Actually this bread is pricked with nail studded stamp called Uyghur bread stamp.

After a chinese sauce and a simple sour pickled cucumbers, am going to take you all to Indonesia. Actually to be honest, Indonesian cuisine is becaming one of my favourite cuisine recently. Their cooking skills are simply fabulous. With easily available ingredients and with less efforts you can dish out many interesting Indonesian dishes. Actually you wont miss Indian style of cooking while trying your hands with this particular cuisine. Needless to say since this cuisine is an Asian cuisine, you will definitely notice that this cuisine calls for chillies, ginger, garlic as much as Indian cuisine. Though am a great fan of Indian style pickles, i dont forget to make some simple pickled vegetables at home to bring the sourness to homemade burgers or to tickle our tastebuds while preparing a meaty sandwich. One of the easiest pickle is pickled cucumbers. Though pickling cucumbers may varies, my today's post is one of quickest method. However if you have an option to prepare yourself the spice powders or sauces at home, dont hesitate a second as they may be sometime very easy to dish out. 4th July Dark Chocolate Almond Fudge

Fudge, this incredible sweets are seriously very easy to dish out as this dish goes for very simple ingredients and easy cooking process. Sweetened condensed milk, chocolate chips and a handful of nuts is quite enough to prepare your own dose of some ultimate chocolate fudge at home. Since this sweet is very quick to dish, i do often prepare this fudges at home with different ingredients. Though my kids favourite fudge is always caramel fudges, i just love chocolate fudges. My today's post is an another simple fudge to dish and pack for a gift or for a picnic to munch. I used 80% dark chocolate for preparing fudge as i love 80% dark chocolate to munch. Not to forget that these dark chocolates are rich in magnesium.

Patriotic Tri-Colour Bundt Cake

After preparing some easy breezy Rice krispies treat, i couldnt think more than baking a cake. My today's post is a very easy cake as well. I opted for bundt cake pan, but still you can bake this buttery cake simply as pound cake with a loaf pan as well. You can bake this cake as a marble cake but i still bake as simple tri colour cake just by dropping the coloured cake batter with no-colour cake batter one over one. A surprise cake to serve and enjoy along with your friends. A prefect cake to celebrate the 4th July day as this cake prefect to pack for your picnic or attending a barbecue. Simple to bake, this cake is definitely a stylish one to place as a center piece in your dinner table on the National day.

4th July Rice Krispies Treat

This week's blogging marathon theme is Easy 4th July dishes, though French peoples celebrates their National day on 14th July, Americans celebrates their National day on 4th July. Since this day is a National holiday, Americans spend their day often by celebrating either by hosting or by attending a picnic or barbecue. Obviously when you are supposed to prepare something easy and simple to pack for this day, i couldnt think more than preparing some easy breezy Rice krispies treats. Whenever i make this simple rice krispies, it gets generally disappears so soon from my kitchen counter and i rarely get a chance to save a slice for next day.

Ragi Flakes Chivda/Finger Millet Flakes Chivda

Chivda, this easy breezy crunchy snacks gets ready very much easily and ready to munch with less efforts.During my last trip to India , i got some packets of wheat flakes, ragi flakes from organic stores. Actually i bought those packets just to make chivdas back home. Both wheat and ragi flakes works wonder for making some interesting quick chivdas. I have prepared this chivda long back and this dish was sitting in my draft since a year. Finally i have a prefect theme to post this incredible chivda. Yes my theme for this week's blogging marathon is Recipes with Wholegrains, i have already posted two incredible dishes with both broken wheat and quinoa. To finish this theme, i couldnt stop myself to post this chivda which was sitting for a while in my draft. If you get this flakes, dont forget to dish out this chivda, as they are extremely healthy.

Quinoa Mushroom Pulao

I can stop myself saying that my all time favourite wholegrain after Oats is 'Quinoa', i just love to cook with this wholegrains. Though i can get this grain from Organic stores, i just cant stop myself picking them whenever i cross an Organic store. Its been quite a routine for me to cook with quinoa, not to forget that this grain is seriously very versatile. Quinoa suits prefectly awesome to cook any sort of dishes from breakfast to dinner, and they works tremendously to cook Indian dishes out of them. I have been cooking quinoa for the past 4 years and everytime i cook with them i feel like exploring something new with this grains. With their nuttiness, this grains are seriously easy to cook and trust me everyone at home love this wholegrain.

Broken wheat, an extremely interesting ingredient to cook with, you can dish out many beautiful and delicious Indian dishes out of this incredible diabetic friendly ingredient. This broken wheat aka Dalia have its own place in my pantry. I just love to cook with this broken wheat as they are extremely prefect to cook from breakfast to dessert. My today's broken wheat biriyani goes definitely for an easy version, with usual spices you can dish out this one pot meal quickly in pressure cooker. Cooking through pressure cooker makes our life easier, obviously if you are in hurry just go with pressure cooking. With handful of mixed vegetables this incredible, diabetic friendly briyani makes an excellent meal to serve along with your favourite side dish and raita.

Eggplant Involtini with Walnuts

Involtini is an Italian word which means stuffed and rolled. My today' post is a delicious eggplant based Italian dish which is called Eggplant Involtini. Usually eggplant slices are stuffed with cheese and ham or any other meat makes this dish, but mine is a vegetarian version. Stuffed with mashed potato, cheese and roughly chopped almonds, this ultimate Eggplant involtini makes a super filling lunch or dinner to enjoy with your favourite salad or with some toasted bread slices. Eggplant is a wonderful vegetable which is quite an alternative to meat in most of the Italian dishes as this vegetable have somewat meaty texture. Amish Dinner Rolls/Eggless Amish Potato Rolls

Amish cuisine is a part of Ohio and Pennsylvania states of America, and their traditional cuisine involves their home grown foods. Amish bake  many varieties of baked goodies such as pie,cookies, cakes and also breads. Amish Dinner rolls are very popular as they are served in most of the Amish restaurants. These dinner rolls came out extremely fluffy, super puffy and soft. This dinner rolls calls for mashed potatoes, which gives the softness to this dinner rolls. I really loved this dinner rolls as they were extremely soft and super spongy than you can imagine and trust me these rolls are just prefect to make some ultimate sandwiches out of it. I have bookmarked this recipe from King Arthur Flour long back while i was searching for an easy breezy dinner rolls, and this dinner rolls caught my eyes immediately.

Egg Manchurian/Steamed Egg Cubes Manchurian - Version 2

Indo chinese dishes are always H's favourite, and i will make sure to dish out an Indo chinese dish atleast once a week from this cuisine. Indo chinese cuisine are very much known for their adapatation of cooking style depending upon Indian taste with chinese seasoning. And most of the Indo chinese dishes are seriously very quick to prepare with a different cooking process. Though Hakka noodles and fried rice from this cuisine is my favourite, kids and H love Indo chinese style manchurian. I have already dished out couple of manchurians with different ingredients, eventhough my today's recipe is quite a different one from the usual one. Dulce de leche, i just love the flavor of this incredible spread, and preparing dulce de leche at home is definitely a tricky job but yet an easiest one. With a can of condensed milk and a pressure cooker is just enough to prepare your own dose of dulce de leche. I have already made many versions of cheesecakes but dulce de leche cheesecake was in my to do list since a long. Finally i baked some Mini dulce de leche cheesecake as i picked I love you Love you Cheesecake as theme. Once i picked this theme, my first choice was Dulce de leche cheesecakes.

No Bake Strawberry Oreo Cheesecake

Cheesecake, i have some huge fans of Cheesecake at home. Obviously if i plan for a cheesecake, i usually start gathering the ingredients immediately than searching for a cheesecake recipe. Yes i may sound funny, coz i always do groceries only on saturday. If i dont get the ingredients on saturday than i cant cook during the weekends, as i can able to cook for blogging only during weekends. I may cook 6-7 dishes or else 2-3 desserts depending upon my themes i usually pick for the blogging marathon only on weekends. When i picked 'I love you love Cheesecake' as theme, i decided to go with a no bake cheesecake, and two baked cheesecakes. When my kids loves baked cheesecakes, my favourite is always no bake cheesecakes. And this time, i dished out this alluring No bake strawberry oreo cheesecake, as this cheesecake calls for oreo biscuits and obviously strawberries.

Badam Puri/Sweet Almond Puri/Badam Poori

Badam means Almonds, this nuts are very rich source of many nutrients, though they are rich in fat, they can be eaten raw. Indian cuisine are loaded with many almond based ultimate dishes. And my today's post is definitely an another tremendous sweet treat which you should surely give a try yourself at home to please your sweet tooth.These badam puri is one of my family's favourite which my grandma never fail to prepare during Diwali festivals. Easy to prepare, this sweet badam puri calls for simple ingredients. Almond paste is added to maida, rice flour to form a soft dough, hence this sweet dish is called Badam puris. These triangular puris fried in medium flame drenched in sugar syrup makes this ultimate Badam puri.

Paruppu Urundai Rasam/Dal Dumplings Rasam

Paruppu Urundai Rasam, is quite a popular and very traditional South Indian recipes which have its own place especially in Tamil Nadu homes. This dish is a super protein rich nutritious Indian style soup to enjoy thoroughly with hot piping rice served along with some spiced roasts or fryums. If you are preparing this rasam, you have to get ready first with the lentil balls aka paruppu urundais. Usually these dumplings are prepared with toor dal, but my mom prepares her lentil dumplings with both toordal and channa dal. And her way of preparing this rasam is bit different from the usual one, she just drop the lentil dumplings directly to the boiling rasam. If you dont feel like dropping the dumplings directly to the rasam, just steam cook them and add them. However i follow always my mom's recipe and this paruppu urundai rasam tastes absolutely flavorsome and delicious, and this is my elder son's favourite. He love this nutritious rasam very much with spicy potato toast.
